This is an Organic Certified coffee that was cultivated bycthe smallholder producers in the municipality of San Cristobal, located in the Chiapas region of Mexico.
Varietals in the San Crisotbal de las Casas, Chiapas, Mexico region include Marsellesa, Typica and Caturra.
With an altitude of 1,100 - 1,350masl this tropical region provides significant variations in weather due to it's dramatic changes in altitude. The soil is extremely fertile, and more than half of the population work in agriculture. This includes not only coffee, but cacao, sugar cane, mangos and bananas.
To ensure quality, producers select the best cherries to depulp. Then, coffee is fermented for 12-17 hours before washing and drying on patios just beside the farmers' homes.
